Wild Garlic Soup
Wild garlic is growing everywhere now in the woodlands surrounding Fosse farmhouse so I decided to use it to make a delicious soup for my guests this weekend. When choosing the plant find one that is situated well away from any roads or rivers to avoid pollution. Pick only the small tender leaves and then boil them for 10 minutes in salted water.Add stock and potatoes and season to taste. The flowers can also be dipped in batter and deep fried in oil - just like Japanese Tempura. Try it and see!
